  • Absinthe is a highly alcoholic spirit characterized by its distinctive green color, strong herbal flavor, and historical association with a unique preparation process. The key botanical ingredient in absinthe is Artemisia absinthium, also known as grand wormwood. This herb, along with other botanicals such as anise and fennel, contributes to the complex and often bitter taste of absinthe.

One of the notable features of absinthe is its high alcohol content, typically ranging from 45% to 74% alcohol by volume (ABV). The spirit is traditionally diluted with water before consumption, a process that often involves dripping water over a sugar cube placed on a slotted spoon and into the glass of absinthe. As water is added, the drink turns cloudy, a phenomenon known as the "louche," which is the result of essential oils from the botanicals coming out of solution.

Absinthe gained notoriety in the late 19th and early 20th centuries, particularly in bohemian and artistic circles. It was often associated with the so-called "Green Hour" or "L'Heure Verte," a time when people would gather to enjoy the drink. However, due to its high alcohol content and the presence of thujone, a compound found in wormwood, absinthe was banned in many countries, including the United States and much of Europe, during the early 20th century.

In recent years, there has been a resurgence of interest in absinthe, and the spirit has experienced a revival in various parts of the world. Regulations surrounding the production and sale of absinthe vary by country, and many modern absinthes adhere to guidelines that limit the thujone content. Today, absinthe is produced and enjoyed as a niche and artisanal spirit, with a renewed appreciation for its historical significance and unique sensory experience.
