  • Starka is a traditional Eastern European aged distilled spirit, with a history that spans several centuries, primarily associated with Poland and Lithuania. Its name, which means "old" in various Slavic languages, reflects its most distinctive feature: the extended aging process that contributes to its unique flavor profile. Starka is made from rye grain, which gives it a base similar to rye vodka, but what sets it apart is the aging process in oak barrels, which imparts complexity, depth, and a rich color to the spirit, much like what happens with whiskey or brandy.

The tradition of making Starka dates back to the 15th century, and it was customarily produced to celebrate the birth of a child. According to tradition, a barrel of Starka would be set aside when a child was born and then opened at their wedding, marking the passage of time and the aging of the spirit alongside the child.

The aging process can last from a few years to several decades, during which the spirit acquires flavors from the oak, including vanilla, toffee, and almond, among others. Some versions of Starka are also infused with additional ingredients such as apple or pear leaves, which contribute to its unique taste. The alcohol content of Starka can vary but typically falls within the range of 40% to 50% alcohol by volume (ABV).

Though less well-known internationally than other spirits, Starka occupies a niche of its own in the world of aged spirits, cherished for its rich history, cultural significance, and the craftsmanship involved in its production. Today, Starka is produced by a few distilleries in Poland and Lithuania, continuing the tradition and offering a taste of the region's distilling heritage.
