: "La Boussole" means "the compass" in French. Indispensable for a passionate sailor like the Breton Maxence Lecat. And also important on long voyages: The oenologist and wine consultant fine-tuned his inner compass during stints in France, the USA, Switzerland, and Germany. Having arrived in the Breisgau region, he has been vinifying Chardonnay and Pinot Noir in the Burgundian style since 2022. Spontaneously fermented organic grapes reveal themselves after long ripening periods to be complex and concentrated, bearing the charm of their creator.
