Since its establishment in 2000, the Bar Giora Vineyard has been committed to organic cultivation. It features a denser planting density than is typical in Israel, with 550 vines per dunam, a practice that induces stress in the vines. This dense planting, combined with a minimalistic irrigation approach, leads to significantly low yields. Moreover, these growing conditions result in the production of unusually small grapes, comparable in size to green peas, which increases the skin to juice ratio, greatly benefiting the skin component. Consequently, the vineyard produces exceptionally concentrated fruit, characterized by rich flavors, which directly influence the distinct profile of Sea Horse Winery's wines.
The vineyard is home to an array of grape varieties, including Chenin Blanc, Syrah, Zinfandel, Grenache, Mourvèdre, and Petite Syrah. These varieties are foundational to the winery's offerings, often named in tribute to renowned artisans who have passed, such as Lennon, Hemingway, Fellini, and Antoine (de Saint-Exupéry), among others.
