3. Type, color and basic requirements
“ Salkhino Ojaleshi ” is a dry red wine that must meet the following requirements:
§ Color – dark garnet with purple hues ;
§ Aroma and taste - full-bodied, refined, lively, extractive and harmonious, with a varietal aroma characteristic of this geographical location, when matured, it develops a pronounced bouquet with fruity tones;
§ The actual alcoholic strength by volume must not be less than 11%;
§ The concentration of the reduced extract mass should not be less than 2 4 g/l;
§ Sugar content should not exceed 4 g/l;
§ Titrate acidity should not be less than 5 g/l;
§ Other characteristics must comply with the requirements established by Georgian legislation.
4. Geographical area and zones of production
The Salkhino microzone is located within the administrative borders of Martvili Municipality , from the left bank of the Tekhuri River to the northeast to the slopes of the Kvibia Mountains. In the southeast it is bordered by the villages of Gachetili and Balda, and in the northeast by Nobulevi . In the southwest it is separated from Didi Chkoni and Taleri by the Tekhuri River. The altitude above sea level is 250 meters.
5. Grape varieties
" Salkhino Ojaleshi " can only be made from Ojaleshi grapes grown in the Salkhino microzone, and the use of other varieties is not permitted.
6. Vineyard cultivation, pruning, shaping and maintenance :
§ In the Salkhino microzone, commercial vineyards intended for the wine “ Salkhino Ojaleshi ” must be cultivated at an altitude of 250 meters above sea level;
§ The distance between rows in a vineyard can be from 1 to 3 meters;
§ The distance between vines in a row is 0.8 - 1.5 meters;
§ Stem height – 60–90 cm;
§ Form of the graft – unilateral or bilateral Georgian, or free.
Vine cultivation, its pruning-forming and protection from pests and diseases, as well as soil cultivation, fertilization and other operations are carried out in accordance with the agrotechnical measures selected by the grape
7. Grape maturity, harvest, transportation :
§ “ Salkhino Ojaleshi ” is made only from ripe grapes. The sugar content of the grapes at the time of picking must be less than 22 % ;
§ Grapes may only be transported in wooden or plastic boxes, in containers made of stainless steel or painted with special paint ;
§ It is prohibited to use polyethylene bags and/or sacks when transporting grapes ;
§ During transportation, grapes should be protected as much as possible from possible damage.
8. Grape harvest and wine production
The grape harvest per 1 hectare of vineyard should not exceed 8 tons .
The wine solution should not exceed:
§ 5 0 0 liters – from one ton of grapes;
§ 40,000 liters – from one hectare of vineyard.
9. Grape processing, winemaking and bottling
The grapes intended for the production of " Salkhino Ojaleshi " must be harvested from vineyards cultivated in Salkhino . Grape processing and winemaking are permitted only within the Salkhino microzone.
The wine " Salkhino Ojaleshi " is made through the complete alcoholic fermentation of Durdo grapes.
The sale of "Salkhino Ojaleshi" wine to the consumer market is permitted only in consumer packaging.
Only those operations, materials, and substances permitted by Georgian legislation may be used in wine production.
10. The connection between the exceptional quality, reputation and geographical location of the wine
Between the places
Climate . The climate of the Salkhino microzone is determined by the proximity of the Black Sea to the west and the location of the Samegrelo and Kodori ranges to the north. The zone covers the Colchis Plain up to an altitude of approximately 200-250 m above sea level.
This microzone is dominated by a maritime humid subtropical climate with warm, mild winters and hot summers.
The annual duration of sunlight in the Salkhino microzone ranges from 2000-2050 hours. During the growing season, the sun shines for an average of 1500 hours.
The average air temperature is 14°C. The warmest months (July, August) are 22.5°C, and the coldest month (January) is +4.8°C.
The sum of active temperatures in the microzone is 8562-5350°C.
The amount of atmospheric precipitation in the microzone during the growing season is 1070 mm, and the annual total is 1810 mm.
The annual value of relative air humidity is 76%.
There is no permanent snow cover in the microzone. Snow cover forms on average in the last decade of January, disappearing in mid-March. The number of snowy days is 18.
The average number of hail days in Litsad is 0.6.
The microzone is dominated by westerly (31%) and easterly (29%) winds. Windless days average 30%. The average annual wind speed is 1.8 m/s.
Soil. The following types and subtypes of soils are distinguished in the territory of the village of Salkhino:
1. Alluvial meadow, loam and sand, of small thickness with strong striations;
2. Alluvial meadow , non-carbonate , loamy , medium and large thickness ;
3. Humus - carbonate , medium- thick , heavy loamy and clayey , occasionally weakly developed and washed away, developed on limestones and igneous conglomerates ;
4. Humus - carbonate , heavy loamy and clayey , occasionally of small thickness and strongly washed out, developed on marls and cherty sandstones;
5. Weak Etcher , of medium and large thickness, heavy clay and loamy, occasionally eroded , developed on old alluvial gravel and clay-gravel layers;
6. Red soil , typical and elongated , heavy clay and clayey , developed on the weathering crust of sedimentary rocks and old lake - river deposits ;
7. Yellow soil , typical and elongated , heavy clay and clayey , developed on the weathering crust of shales , sandstone conglomerates .
The above-mentioned soils prevalent in this area, together with the climatic conditions, allow for the production of high-quality wine – “Salkhino Ojaleshi”.
Human factor. " Viticulture and winemaking have held an honorable place in the agriculture of Samegrelo since time immemorial and were highly developed. This is evidenced by many writers and travelers, both ancient - starting with Homer, and modern ones: Chardin, Lambert, Contarin, Dubois de Montperre, Hacksthausen and many others.
"In almost every village in Samegrelo, we find pieces of grape-pressing stones, the names of which are not even known to the current generation. In addition, many customs and traditions have remained among the people, which were established in honor of viticulture and winemaking," writes Ermile Nakashidze.
The fact that Samegrelo is an ancient region with a high culture of viticulture is also indicated by the fact that more than fifty grape varieties were bred here.
In the second half of the 19th century , Prince Ashil Murat made a great contribution to the revival of viticulture and winemaking in Samegrelo, including Salkhino. He planted vineyards with Ojaleshi grape varieties in Salkhino and Chkaduash. His Ojaleshi wine received various medals and certificates of honor at various international exhibitions .
Since 1942, a red semi-sweet wine called "Ojaleshi" has been produced, which has enjoyed considerable popularity.
Currently, a dry red wine is being produced under the name "Salkhino Ojaleshi", which is highly appreciated both in Georgia and abroad.
The geographical location of the Salkhino microzone, the climate characteristic of the region: a humid subtropical maritime climate with warm, mild winters and hot summers, moderate amounts of atmospheric precipitation, soil diversity, the special characteristics of the Ojalesi grape variety characteristic only of this microzone, and the local, centuries-old tradition of viticulture and winemaking determine the unique organoleptic properties of the wine “Salkhino Ojalesi”, characteristic only of this wine.
11. Transitional provisions
Grape processing and/or winemaking and/or bottling is permitted outside the Salkhino microzone until December 31, 2030.
In addition, the removal of grapes and/or wine from the microzone for processing and/or bottling is permitted only under strict accounting and control.
12. Special labeling requirements
The name “Salkhino Ojaleshi” and the indication “Wine with Protected Designation of Origin” will be placed on the label, packaging, as well as in the documents accompanying the wine and in advertising materials in foreign languages as follows:
